Billecart-Salmon Brut Champagne, NV ($50) (Kate’s favorite). Pairing: oysters, light seafood, gorgonzola, Bourgogne triple cream cheese, French fries or warm creamy winter soups.
2002 Domaine Zind Humbrecht Herrenweg de Turckheim Gewürztraminer from Alsace ($33) Pairing: Turkey, Alsatian dishes such as sauerkraut, sausages and Munster cheese. Or serve with dessert; try a bourbon peach tartlet.
Reds
2005 Domaine Daniel Chauveau $20. According to Kate, “A wine for the connoisseur.” Pairing: Roasted rack of lamb and winter vegetables. Any game birds, like duck confit or a stuffed hen.
2005 Finca Sandoval ($37) from Manchuela, Spain. Pairing: roasted leg of lamb, game, winter stews or boeuf Bourgogne and hard robust cheeses like manchego and comte.
2002 Tommaso Bussola Amarone Della Valpolicella Classico Bg ($40)
Pairing: Tenderloin roast stuffed with stilton and a cherry reduction sauce, a cheese plate of aged parmesan reggiano and dark chocolate, and a molten chocolate cake.”
